We are wanting to purchase a 28 yr old log home but need more space for a while until the kiddos move out. There is a loft above the kitchen/dining and its open above the living room. Would it be reasonable to put a sort of plywood flooring above the ceiling joists to create another sort of temporary room upstairs?

It's hard to say without seeing it. It may not be able to handle the weight load. Have a local contractor look at it.
