I have several log cabins built between 1960 and 1975. They are all black spruce and have been stained almost every year since they were built. they look aged and some are starting to turn black. I am wondering what is the best way to "spruce" them up? I like the rustic look but I think it has gone too far. Any information would be greatly appreciated.

It sounds like you have been using a stain that has a plant oil in it, Linseed, etc. You will have to media blast them and then Osborne brush them to clean up for a fresh stain. I would recommend a good latex stain made for log homes.
