Our tiny kitchen doesn't have a window and is very dark in there. The kitchen is on the back side of the house. Would it be doable to cut through the logs to add a window or would this no be a good ideal to do?

Yes it can be done. Cut out the logs far enough to build a 2x6 or 2x4 framing or "buck" into the opening to install window to.
