Question:

Need to remove old Log Jam Chinking that has pulled away from the logs. Any ideas on how to do this?

Answer:

Cut along top and bottom edge with a utility knife and pull out. You will probably have to sand these edges to remove the rest of the Log Jamb from the logs.
