Hi! We are building a cabin and milling our own boards. The boards are goin to be white fur. We are trying to decide what to do for chinking and wondering if there is a product we can apply before the logs dry that will be flexible and expand as the wood drys??

DO NOT apply anything before the logs are good and dry! You could possibly promote resin bleed by sealing them to soon. Stack them with spacers to allow air movement and only cover the top with a tarp, not the sides. I recommend using Life Line stain once they are ready to stain.
