If you are going true historic then try use expanded metal stapled in the gaps and then trowel a mortar mixture high in Portland over it. If you want the best way that will be the friendliest to the logs and last the longest fill the gaps with Grip Strip and apply Perma Chink Medium Gray #224 over the strip. The #224 looks just like mortar, but will flex with the log movement from warm to cold weather, and the sun hitting them in the heat of the day.
