I had 11 white pine logs replaced professionally on my 125 year old log cabin. Is there a way to speed up the weathering process so that they will more closely match the old logs (never painted or treated) in their dark grey color?

Not much you can do. You might want to try brushing a very light coat of some semitransparent gray stain and then wipe to start the blending process. You should definitely apply a good heavy coat of Shell Guard borate treatment first. White Pine is very susceptible to rot and the Shell Guard will slow it way down if not stop it if you keep up on a maintenance program for treating it.
