We are looking into buying and renovating a 1972 log cabin in mid-Ohio. It is very run down and needs a lot of work. What is the best option for insulating the walls of the existing cabin? We are considering putting up drywall with insulation between the log wall and the drywall.

You will need to fur out the walls to hang the dry wall on. I would recommend a closed cell foam be sprayed on the walls after the furring, but before the dry wall to insulate. You will get more R value this way for the thin amount of insulation that you are going to be able to have between the logs and drywall. If there is any rot it must be replaced before covering.
