Never use bleach to try and lighten wood! Youcan try using Wood ReNew from Perma Chink. They also have a product called Oxcon which will help lighten them up. Call Timeless Wood Care Products at 800-564-2987 for these products and help using them.
Altough it’s to late, Poly souldn’t be used, because it does turn yellow. It probably will not blend over time. Tinting is probably going to be your best route.
Best way for the interior is to sand it all off.
Yellow Pine is a lot denser and less susceptible to rot than White Pine.
80% chance they are some sort of pine. If not pine, I have seenCedar, Cypress, or a hardwood of some sort in these kit style homes. I don’t know how to tell you without seeing it. Most any builder should be able to identify it.

Not a big Cabot fan. I would recommend either Perma Chink Gentry Gray or Stone Gray. Also, Sherwin Williams Woodscapes has several Gray shades that would work well.
