1945 log home. The gap varies between 3/4″ and 1.25″, should I use caulk or chinking?

I would probably recommend chinking the gaps on your log home due to the size. The log home caulks usually recommend a size of UP TO 3/4″. So anything larger than that might be too wide. Make sure you are using a foam backer like Grip Strip behind the chinking as well.
