We have drywall butting to log walls in the interior of our log home. As the house has settled, the drywall has pulled away. What can we do to fill in the space?

Ideally, when the dry wall is installed there should be a slot cut down thru the logs that the dry wall tucks into so the logs can slide by as they settle. You may have to clean the rough areas up and cover with chink along the line. You should wait until the house is at least 3 years old before chinking.
