I have a lob cabin built in the 40’s, with original mortar chinking. the logs average 6-7” diameter. The chinking is 1 to 1.5” wide. Do I have to remove the existing chinking or simply cover the existing. I would remove any loose chinking.

Covering it is fine as long as the edges are not rough so that you can get a nice clean line with the new.
