Should pine,tongue & grove logs be treated with a varnish or stain on the back before installing? Does it have to be stained the first year?

I would not recommend staining the back side, and it is less costly to stain the first year since you will have to clean the logs if you wait. Log Wash and Wood Renewfrom Perma Chink willhelp clean them if you do wait.
