My Recently purchased home is made of old barn timbers. While inspecting the Chinking I realized There was little (insulation behind it). I dont want to rechink and reseal. What problems would I encounter, sealing with great stuff doors and windows, or large gap. Bore a hole or two and fill the void. I understand how this should have been done to begin, Im trying to buy time. Thank you, Mark

You may end up pushing the chink out from the foam expanding. You must be very careful with the canned foam around doors and windows. If you put too much it will cause the frames to bind. I would not recommend it.
