We have a log house in NW Montana and will leave it for the winter. Is it alright to shut off the heat during the winter? Will this damage the logs or the chaulking/chinking?

Should be good if there is good insulation in the roof. I have seen black mold grow inside on the roof boards after a winter of snow sitting on the roof and no insulation in the roof. Doesn’t happen all the time, but I have seen it more than once. BestI can tell you.
