Have exposed wooden beams that were stained and then coated with poly. Sap has come through the poly. How do I remove the sap and prevent this from coming through again. to re stain.

You probably will never stop it completly. Logs like this will ooze sap for many years when exposed to heat. You can get it off by scraping it with a putting knife, but you may have to loosen it with a paint removing heat gun which will probably make it ooze again. This is a big catch 22 with this type of log.
