If it has a stain on the logs you are looking at having to give it a LIGHT wash and a coat of the same kid of stain that is on it now every 3 to 4 years.

Shop Vac with a brush attachment is probably your best bet.
The slower the log dries the better. Maybe have it put into a kiln that is real slow.
Energy Seal from Perma Chink. Call 800-564-2987 to purchase. Only seal the chink lines where two logs lay together. As for the checks (cracks) in the logs only fill the ones that are running into a window, door or corner and are allowing wind, water or bugs to get inside.
I would not recommend covering the entire wall. I’m not familiar with the foam but it sounds like it would be OK to fill holes with.

Yes, run a bead of Energy seal along all of the chinking to seal.
