The best way is to give them a light sanding. You can try washing them with a mixture of 1 cup bleach and 1 cup TSP in 4-5 gallons warm water to see if you get the results that you are looking for first.

There are hundreds of homes built in this fashion. The Cedar siding will eventuallyturn grey of you do not seal them with some kind of light stain and clear coat to help block the suns UV rays which cause the graying.

You definitely want to seal all of the breaks in the chink.I’m not sure what was used for chinking, but you should try to use a similar product, whether it was latex chink or mortar. You will need some sort of trowel to smooth out and seal the chinking.
It could be one of two problems. Either there is a humidifier on the furnace that is turned too high, or there is not enough insulation in the ceiling causing condensation on the cool ceiling in the AM.
It would be best to caulk the exterior.
