The slower you dry them the less they will crack and split. You may want to have them kiln dried, then air dry under cover (just over top, not sides) for 6+ months before using. Try call a local sawmill for drying and more info.

Look for rot at the bottom corners of windows and doors on the exterior. Also anywhere water is splashing on a deck from a roof.

Sounds like resin bleed, but normally that happens right away after installation. From what you are describing I do not think it is a infestation.
I would make them re-do it correctly, but if that’s not an option you should seal all holes with Energy Seal.

It sounds like Powder Post beetle, but there should be tiny pin holes above the dust piles. If so, the house should be stripped and borate treated.
