If you like the gray look leave it as is, but apply a borate treatment. Shell-Guard would be best.

Do not use bleach on wood. It can cause peeling. you should sand everything with 60 grit palm sander and wipe down with tack clothes before staining. GO light on the stain color. You do not want it too dark inside.
