Yes, you should use chinking. You will have to use a special order closed cell foam as a backer. Cut it to fit tight and then apply the chink to it. You can get the foam from Timeless Wood Care Products at 800-564-2987.
You need to caulk the exterior complete.
Yes, I would say you can break this material off the logs. You may have to corn cob blast the interior logs to clean them. It is best to sand them also, before you apply a finish as it will be easier for cleaning in the future.
I would recommend that you caulk the exterior completely. Yo may have to put some backer foam in the larger areas.
I’m sure it would help a lot. If the line is 3/4” or less use Energy Seal. If it is larger use Perma Chink. You can get thses products from Timeless Wood Care Products at 800-564-2987.

I would recommend caulking the entire exterior complete with Energy Seal.
You should runn a bead of Energy Seal into each line and trowel smooth to help seal it.
